Silver Award Winner CAMRA 2002. Racking from the lees and specific storage conditions are the simple practises of the artisan cidermakers. The use of the bitter sharp and bitter sweet apple varieties, common to the West country, produces a cider high in tannins, with a distinct gold colour. The combination of sharp and sweet cider apples creates a balanced flavour that does not leave the mouth feeling dry. The black and gold label ciders are easy to drink on their own or with a meal. Understandably popular ciders.

Methods of cidermaking, long forgotten in this country but still practised in France, have been re-introduced to produce these high quality ciders. Traditionally known as keeved cider, the fermentation is slowed to allow the cider to retain a natural, subtle sweetness. Gentle fermentation continues in the bottle requiring a cork and wire to hold the sparkle in suspension. In champagne bottles, these ciders can grace any table. A true artisan cider of Cornwall.
